Grilled Watermelon Salad with Feta

A nice summer salad to supplement your proteins.
Serves 4 People
Dressing
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- Freshly ground pepper
Salad
- ½ large watermelon
- 40 g pine nuts
- 200 g feta cheese
- 75 g arugula
- 1 handful of fresh basil
- 1 handful of fresh mint
This is the way To make it...
Method
- Mix olive oil with balsamic vinegar and season with freshly ground pepper.
- Peel the watermelon and cut it into medium-sized pieces.
- Crumble the feta and rinse the arugula.
- Heat up the plancha (griddle).
- Brush the griddle with oil.
- Grill the watermelon pieces for 5-6 minutes on high heat until they have a golden surface. Turn them regularly during the process.
- Toast the pine nuts very briefly next to the watermelon.
- Place arugula on a large platter.
- Add the grilled watermelon pieces on top. Sprinkle with feta and toasted pine nuts, garnish with fresh herbs, drizzle with the dressing and serve immediately.
